Making the vanilla cake is so easy that there are no steps, just throw all the ingredients into a bowl and mix until you get a batter that’s shiny I mean it can’t get any easier than that plus, the little ones love to help mixing everything making this a perfect afternoon activity.
Once you have your cake in the oven is time to whip up the berry frosting. I really LOVE this berry frosting and actually should devote a full post to it because it’s that good! You can use it with cupcakes, for cookies or even as a dip for pretzel sticks and apple slices. Also, the ultra beautiful pink color is completely natural! It’s made entirely with butter, powdered sugar and berries preserves, so no weird ingredients in there.
While you could make the frosting with fresh berries I find that they water down the frosting a lot, so you end up needing way more powdered sugar than the one I like to use. I like my frostings to have more flavor than just being sweet. While jams and jellies also work perfectly fine I like from the preserves that it leaves little chunks of berries, so it adds up to the texture of the frosting. Trust me on this one use the berry preserve, it’s worth it.
I also love that decorating it is so easy and that you don’t actually need to know how to use a piping bag, you can just spread the frosting on top of the cake using a spoon and cover all the mistakes with a generous amount of fresh berries.
- Cake
- 3 Cups flour
- 2 Tsp baking powder
- 1 ½ Cup sugar
- 1 Cup butter
- 4 Eggs
- 1 Cup water
- 1 Tsp vanilla extract
- For the Frosting
- ½ Cup butter
- ¼ Cup berry preserve
- 2 Cups powdered sugar
- Topping
- 1 ¼ Cups Berries
- Preheat the oven to 350 degrees.
- Place all the ingredients in a bowl and mix them well until the batter gets shiny and has no lumps in it.
- Pour the batter into a greased a cake pan.
- Take to the oven and bake for 40 minutes or until done.
- Meanwhile, whip up the frosting: in a bowl add the butter and berry preserve and mix for 3 minutes. Then incorporate the powdered sugar and continue mixing until fluffy.
- Once the cake is done, remove from the oven and let it cool down for 10 minutes.
- Remove the cake from the cake pan and let it cool for 25 minutes.
- Serve, decorate with frosting, top with berries, and enjoy.
